Native to Mexico Pasilla Chilis are also known as Chile Negro (black pepper) or Pasilla Negro and are actually the dried version of the Chilaca Chiles which are dark green chilis that pack a similar heat to the Poblanos pepper.
When dried, the resulting Pasilla Chilis are almost black in color and their appearance is similar to that of a raisin. The taste is pungent but with a rich flavor and herb like undertones that is sophisticated and long-lasting.
The Dried Pasilla Chili is a key ingredient in the famous "holy trinity" of Mexican chilis used in mole sauces along with the Ancho and the Mulato chilis.
Pasilla Chiles are usually toasted and then blended to be used in salsas, stews and even enchiladas.
To use this chili, remove stem and seeds and place chilis in hot water for about 10-15 minutes until tender.
