Pozole is a delicious Mexican stew with corn as the main ingredient. But this is no ordinary corn! These corn kernels have been treated with a process of nixtamalization. This process ensures that the hard-outer husk of the grain is released, which makes the grains burst during cooking, leading to a tender consistency.
